I made your lovely …
I made your lovely recipe and added 2T of rice flour and cornstarch and bit of soy milk, this added up to 3 vegan eggs. It turned out delicious, we could taste the sweetness of the capsicums and the vegan scrambled tasted like 5 eggs were in it instead of two. Thank you Clara! you’re a champion.

I made this tonight and it was AMAZING and super filling! I only had 1 pepper and 2 eggs left in the fridge. That fed me and my husband and where still huffing cause where so full! But I added a lot less oil & salt <3 I love you Clara.

She seasons with salt just like a chef does. They use considerably more than we do in our home. That’s why restaurant food tastes so good!

Why? Because she uses a teaspoon of salt instead of a dash? The oil isn’t so much, just enough to cook her food in most of these recipes. Olive oil is considerably healthier and lower in fat than most others.
I suppose her personal taste towards heavier salting is simply a result of her old age – one of the many faculties which leaves us with time is sensitivity to taste. The elderly often prefer food that is mildly spiced but heavily seasoned, i.e. no chilis but lots of salt and pepper.
